El trabajo consiste en una optimización del tratamiento de alimentos de origen animal (carne y pescado) de humedad intermedia con electrones acelerados para reducir el número de bacterias patógenas no esporuladas hasta niveles seguros.

HIGIENIZACIÓN DE ALIMENTOS LISTOS PARA EL CONSUMO MEDIANTE ELECTRONES ACELERADOS

La aplicación de electrones acelerados a dosis de 1.5 kGy es suficiente para garantizar, bajo el criterio de "tolerancia cero", la ausencia de bacterias patógenas no esporuladas en alimentos listos para el consumo (productos cárnicos y de la pesca) de humedad intermedia (actividad de agua menor de 0.88).
