El almacenamiento de atún entero a granel en atmósfera controlada, simulando el almacenamiento en barcos de pesca, es efectivo

CALIDAD DEL ATUN DURANTE SU ALMACENAMIENTO A GRANEL EN ATMOSFERAS CONTROLADAS

La conservación de atún a granel en atmósfera controlada con una mezcla de gases (60:15:25, CO2/O2/N2) prolonga su vida útil 9 días más que la conservación tradicional en hielo. Los índices convencionales de calidad pH, TMA-N y NBVT no reflejaron su deterioro y podrían ser sustituidos por el análisis de las aminas biógenas histamina, cadaverina y agmatina.
